Start by adding the pH Reducer during the phase in which you have the most amount of mixing. The usage rate of the pH reducer can vary between 0.2-1.5%. At the lower concentration, we do not anticipate a flavor impact. Depending on your product, you will notice a change in flavor once you reach a higher concentration of the pH reducer. We recommend experimenting with a few different usage levels starting at 1% and going up and down a little at a time. Once you notice a difference in flavor, dial down the concentration a bit. This is your flavor threshold. The pH reducer requires time or heat to take effect so test the pH 24 hours after mixing or for faster results, heat the sample to 120F and wait until it cools back to room temperature.
